Oops I did it again.
I can think of a lot of things that are gothic but not metal which might be sweet at a wedding... Dawn Desiree or Collide, for example... everything that comes to mind is more synth-oriented or else mediaeval. So... I'll second the Nightwish vote. It's pretty and mostly inoffensive, but it also has that heavy side to it.
